They were made of stone and brick.  They were built by masons.

Structures built with stone by a highly skilled mason can last for centuries, far longer than any wood structure with far less maintenance required.  The initial cost of a stone or brick building may be more than its equivalent made in wood, but the cost of maintaining a stone building over its life as opposed to a wooden structure is anything but equivalent.  Wood rots.  Wood burns.  Wood splits under the strain of high winds.  Wood is vulnerable to termites, carpenter bees, and other such insects.

Brick and stone have none of these inherent flaws.  The materials masons use are stronger than wood, and far more durable.  Stone structures are also better insulated than wooden structures, keeping the weather and noise from the outside where it belongs: outside, and away from you and your family.  The maintenance costs will be far less, as well.  Wood eventually has to be replaced, whereas stone will never be.

A more modern technique involves the use of concrete and reinforced steel in making homes.  This has many of the benefits of a structure made of stone with a significant decrease in cost because the materials used are completely manmade.  A concrete home can also be designed to look like it was built with any material you want.
